This is usually caused by the phone's battery optimisation suspending the Pixel Watch app, Bluetooth interference, or simply being out of range. Keep the phone and watch within 10 metres of each other.
Bluetooth has a maximum range of about 10 metres in open air. Moving between rooms or floors will naturally cause disconnections.
