Adjust the grind finer by one step.
Espresso requires a fine, consistent grind to build the 8-9 bar of pressure needed for proper extraction. If the shot pulls in under 20 seconds and is thin and watery, the grind is too coarse. On the Breville Barista Express: turn the grind size dial one step to the left (finer). Test one shot, then adjust further if needed.

Increase the coffee dose.
A double basket requires 18-20g of coffee; a single basket requires 8-10g. Using too little coffee leaves space in the basket — the puck collapses under pressure and allows water to channel through without resistance. Use the scale to weigh your dose before grinding.

Ensure the portafilter is locked in firmly.
Insert the portafilter into the group head and turn it clockwise firmly until it stops — it should feel tight. A loose portafilter allows high-pressure water to bypass the coffee puck, producing a weak shot and often a leak around the group head.

Tamp the coffee puck evenly and firmly.
Tamping with 15-20kg of even downward pressure creates a flat, uniform puck that water cannot bypass. An uneven or insufficiently tamped puck causes channelling — water finds the path of least resistance and most of the coffee is not extracted.

Run a descale cycle if the machine has heavy use.
Scale deposits in the pump head and thermocoil reduce the maximum pressure the pump can generate. If grind adjustment and dose correction do not restore pressure, descaling often resolves residual pressure issues.
