Breville sous vide stuck at lower temperature than set means: starting from very cold water (cold water takes 10-15 minutes per 10°C to climb), pot too large for cooker capacity, or pot losing heat faster than cooker can add it.
Use room-temperature water to start, cover the bath, and use a properly-sized pot.
Joule should heat 5L water from 20°C to 60°C in about 15 minutes.

- Wrong target temperature set

Use warm starting water.
Fill pot with warm tap water (40-50°C).
Cuts heating time dramatically.
Cooker only needs to heat from warm to target, not from cold.

Cover the bath.
Cling film, foil, or sous vide balls reduce evaporation and heat loss.
Uncovered baths lose 5-10°C per hour to evaporation.
Cooker fights losses constantly — bath may never reach target.
Cover is essential for long cooks. -
Check pot size.
Joule and Joule Turbo rated for 5-10L water.
Beyond 10L, heating is slow and may not reach target with uncovered bath.
Use a smaller pot or insulate larger pot.
Stockpots and bain-marie pots designed for sous vide work better than open flat-bottomed pots. -
Move to warmer room.
Cooker in 18°C room can lose heat as fast as adds it for high temperatures.
Move cooker to warmer area (kitchen vs garage).
Or use insulated cooler — sous vide-rated cooler with hole cut for cooker is excellent for very long cooks. -
Descale the heater.
Mineral scale insulates the heater element, reducing heat transfer.
Run cooker in 50/50 white vinegar and water for 30 minutes at 60°C.
