Won't Reach Target Temperature

Breville Sous Vide Cooker

Severity: Moderate

What Does This Error Mean?

Breville sous vide stuck at lower temperature than set means: starting from very cold water (cold water takes 10-15 minutes per 10°C to climb), pot too large for cooker capacity, or pot losing heat faster than cooker can add it.
Use room-temperature water to start, cover the bath, and use a properly-sized pot.
Joule should heat 5L water from 20°C to 60°C in about 15 minutes.

Affected Models

  • Breville Joule
  • Breville Joule Turbo
  • Breville Sous Vide CS10001

Common Causes

  • Starting from very cold water (4-5°C from refrigerator)
  • Pot too large for cooker capacity (Joule rated 5-10L)
  • Bath uncovered — losing heat to evaporation faster than added
  • Cool ambient room temperature (basement, garage in winter)
  • Heater element scaled and reducing efficiency
  • Wrong target temperature set

How to Fix It

  1. Use warm starting water.

Fill pot with warm tap water (40-50°C).
    Cuts heating time dramatically.
Cooker only needs to heat from warm to target, not from cold.
Saves 10-15 minutes for typical 60°C cook.

  2. Cover the bath.

Cling film, foil, or sous vide balls reduce evaporation and heat loss.
Uncovered baths lose 5-10°C per hour to evaporation.
Cooker fights losses constantly — bath may never reach target.
Cover is essential for long cooks.

  3. Check pot size.

Joule and Joule Turbo rated for 5-10L water.
Beyond 10L, heating is slow and may not reach target with uncovered bath.
Use a smaller pot or insulate larger pot.
Stockpots and bain-marie pots designed for sous vide work better than open flat-bottomed pots.

  4. Move to warmer room.

Cooker in 18°C room can lose heat as fast as adds it for high temperatures.
Move cooker to warmer area (kitchen vs garage).
Or use insulated cooler — sous vide-rated cooler with hole cut for cooker is excellent for very long cooks.

  5. Descale the heater.

Mineral scale insulates the heater element, reducing heat transfer.
Run cooker in 50/50 white vinegar and water for 30 minutes at 60°C.
    Plain water rinse 15 minutes.
Recommended every 6-12 months in hard water areas.

  6. Verify target setting.

    Joule app shows target.
    Confirm correct temperature.
F vs C unit confusion — 60F is much cooler than 60C; check unit setting.
Default is C in most regions.

Frequently Asked Questions

What's normal warm-up time?

From room-temp water (20°C) to 60°C: 10-15 minutes for 5L bath.
From cold water (5°C) to 60°C: 25-35 minutes.
Add 5-10 minutes if uncovered.
If your cooker takes much longer than this, something's restricting heat transfer.
